There are 3 main types of turning coffee cherry into green beans, with variations on each becoming more common.
● Washed coffees use a combination of machines and varying amounts of water to remove the fruit and layer of mucilage from the parchment coffee and then dried either mechanically or on beds or patios.
● Natural coffees are dried with the fruit still on the parchment.
● Honey coffees have the outer fruit removed but are dried with varying amounts of mucilage on the parchment. Yellow honey the least, Red honey in between and black honey the most.
